Organic Cinnamon at a glance
Cinnamon (Darusita / real cinnamon tree / Cinnamomum verum) is an evergreen tree that grows up to 12 meters high, but is often pruned back to shrub height when cultivated. Its oval leaves, scented with cinnamon oil, are initially red and later turn dark green. Its small, pale yellow flowers develop into large, purple fruits.
The cinnamon bark used in Ayurveda is located under the outer bark. For harvesting in spring and late autumn, young branches are cut from the tree, the cinnamon bark is peeled out and dried. When dried, they roll up into the familiar cinnamon sticks. Cinnamon is one of the oldest spices in the world and is said to have been more valuable than gold in the past. King Salomon is said to have sprinkled his warehouse with myrrh, aloe and cinnamon to season the night of love.
